Lauki Raita :
Ingredients:
- 1/2 cup grated lauki
- 1 cup whisked curd
- 2-3 green chilly finely chopped
- Fistful fresh chopped coriander leaves
- 1/2 teaspoon cumin seed
- 1 Pinch Asafoetida (Hing)
- 1/2 teaspoon cumin powder
- 1/4 teaspoon red chilly powder
- 1/2 teaspoon chat masala
- 1/2 teaspoon sugar
- Salt as per taste
- 2 teaspoon vegetable oil

How to make Lauki Raita :
Step1: Peel the skin and discard the seeds of bottle gourd and grate it. Sprinkle some salt on it and let it rest for 5 min so that extra moisture will come out. Then squeeze out extra water.
Now add 1-2 teaspoon oil in a heated pan, then add cumin seed and let them crackle. Keep the flame to low-medium, add hing and grated lauki. Saute it for 5-6 minutes.
Once lauki is sauteed well. Turn off the flame and let it cool for 5 minutes.
Step2: Now in bowl add whisked curd, lauki, green chilly, coriander leaves, sugar, chat masala, red chilly powder, cumin powder and salt as per your taste. You can also add 4-5 teaspoon water to make it as per your desired consistency. Mix everything well, adjust sugar and salt as per your taste.

Lauki Raita is ready. This raita tastes great when served chilled. Serve it with biryani’s, parathas, theplas or as a side dish.
